The story of this dish
Celeriac is a root vegetable developed from wild celery and has long been used in Mediterranean and European cooking. In Turkey it is sold in winter markets with its leaves still attached and is most often cooked in olive oil.
Braising it in orange juice is a much-loved version in Istanbul and Aegean cooking; the citrus softens the root's sharp, earthy flavor. The dish appears on everyday family tables as well as on the olive-oil platters of special gatherings.
