The story of this dish
Beans are a New World crop: they reached Europe after the voyages of Columbus and from there made their way into the Ottoman lands. They took time to settle into Anatolian cooking, but because they were cheap, filling and easy to store, they eventually became a pillar of everyday food.
Today kuru fasulye with rice is often jokingly called Turkey's national dish. It is a fixture of workers' restaurants, school and military canteens and family tables alike, traditionally served with pickles and a chunk of raw onion on the side.
