The story of this dish
Karnıyarık literally means "split belly", describing exactly how it is made: the fried eggplant is slit open and filled with spiced ground meat. Eggplant was one of the most loved vegetables of Ottoman cuisine, cooked in countless ways from the palace kitchens to ordinary homes.
Its close relative is imam bayıldı, in which the eggplant is also split and stuffed but cooked in olive oil without meat and served cold. Today karnıyarık is a staple of Turkish home cooking and of the traditional workers' restaurants known as esnaf lokantası, especially in summer.
