The story of this dish
The artichoke is generally considered a cultivated form of a wild thistle known around the Mediterranean since antiquity. In Turkey it grows mainly along the Aegean coast, and the district of Urla near İzmir is especially famous for it; in spring, market stalls are full of vendors trimming artichokes on the spot.
Artichokes in olive oil are one of the most refined examples of the zeytinyağlı tradition handed down from Ottoman cooking: vegetables gently braised in plenty of olive oil and little water, then eaten cool. The dish is a highlight of spring tables in Istanbul and the Aegean, and a favorite meze.
