The story of this dish
In Thai the dish is called kaeng khiao wan, "sweet green curry". The "sweet" refers less to sugar than to the color, a light, bright green that comes from a paste pounded from fresh green chilies, lemongrass, galangal and coriander root.
Although it is hard to date precisely, green curry in its current form is thought to be a relatively recent dish that took shape in central Thai cooking in the early 20th century. Coconut-milk curries are a cornerstone of the Thai table, and green curry is now, along with red and massaman curry, one of the best-known Thai curries in the world.
