The story of this dish
The name combines tom, Thai for "to boil", with yum, a word for a sour and spicy mix; goong means shrimp. The soup is generally thought to come from central Thailand, a region of rivers and canals where freshwater prawns were plentiful.
There are two main styles: the clear tom yum nam sai and the cloudy tom yum nam khon, enriched with coconut milk or milk. Today it is Thailand's most famous soup and a perfect example of the Thai habit of bringing sour, hot, salty and gently sweet together in one bowl.
