The story of this dish
Pad thai simply means "Thai-style stir-fry". According to the popular account, it was promoted and popularized in the late 1930s and 1940s under Prime Minister Plaek Phibunsongkhram, as part of campaigns to build a national identity and manage rice consumption, although historians debate the details of this story.
Rice noodles and wok frying have Chinese roots, but the sweet-sour-salty balance of tamarind, fish sauce and palm sugar makes the dish thoroughly Thai. Pork is rarely used in it; shrimp and chicken are the most common versions, and today it is the best-known dish of Thai cuisine worldwide.
