The story of this dish
Som tam means "pounded sour" in Thai, named after the way it is made. It originates in Laos and the Isan region of northeastern Thailand; in Laos it is called tam mak hoong and is often made with the pungent fermented fish sauce padaek.
Papaya itself is native to the Americas and reached Southeast Asia centuries ago through European traders. Carried to Bangkok by migrants from Isan, som tam spread across the country and is now one of Thailand's best-loved street foods.
