The story of this dish
A yayla is a cool highland pasture where Anatolian herders take their animals in summer, and yayla soup takes its name from that world of abundant milk and yogurt. Cooking yogurt with grains is a very old Anatolian tradition, and different regions make yogurt soups with wheat, barley or rice.
Today yayla soup ranks with lentil and ezogelin soup among the best-known soups on Turkish restaurant menus. Because it is gentle on the stomach, it is also a favorite when someone is ill or on cold winter days.
