The story of this dish
Despite the name, yakisoba is not made with buckwheat soba noodles but with Chinese-style wheat noodles. In Japan the word "soba" was long used loosely for noodles in general, which is how the dish got its name.
Yakisoba is generally thought to have emerged in Japan in the 20th century, inspired by Chinese stir-fried noodles, though its exact birthplace and date are debated. Today it is best known as festival (matsuri) food cooked on huge griddles, and its tangy-sweet sauce is built on the dark, fruity condiment Japanese cooks call "Worcester sauce".
