The story of this dish
The name teriyaki combines two Japanese words: "teri", meaning shine, and "yaki", meaning grilled or pan-cooked. It is really a technique rather than a single dish: a sauce of soy, mirin and sugar is brushed on at the end of cooking, giving meat or fish its signature glossy finish.
In Japan the method is traditionally used most often with fish, especially rich fish such as yellowtail (buri). Chicken teriyaki spread around the world largely through Japanese immigrant communities, particularly in the United States, and is now one of the best-known faces of Japanese cooking abroad.
