The story of this dish
Miso is a paste made by fermenting soybeans with salt and koji mould, and it is generally traced back to fermented soybean pastes from China; it is thought to have reached Japan many centuries ago, most likely by way of China and Korea.
Dissolving miso in stock to make a soup is said to have spread during the Kamakura period (12th-14th centuries), among Zen temples and the samurai class. Over time it became a pillar of the simple Japanese meal alongside rice and pickles, and many households still start the day with a bowl of it.
