The story of this dish
Tamagoyaki literally means "grilled egg" in Japanese and is made by rolling up thin layers of omelette. In Japan a rectangular pan called a makiyakinabe is often used, but plenty of home cooks make it in an ordinary round pan.
Regional styles differ: the Tokyo area tends to favour sweeter versions, while around Osaka and Kyoto people often prefer dashimaki tamago, which is richer in dashi and less sweet. Tamagoyaki is a staple of bento boxes and a classic item at sushi counters.
