The story of this dish
Stuffed vegetables spread through the Balkans and Central Europe during the Ottoman era, and töltött paprika is widely believed to have entered Hungarian cooking through that exchange. What sets the Hungarian version apart from Turkish biber dolması is that it simmers like a stew in plenty of lightly sweetened tomato sauce.
In Hungary it is usually made with ground pork or a pork-and-beef mix and appears on tables in early autumn, when peppers are at their most plentiful. This home version uses beef only.

Chicken Paprikash (Csirkepaprikás)
