The story of this dish
The name comes from the Hungarian láng, "flame". On village baking days it was a flatbread cooked at the mouth of the bread oven before it was fully hot, and it is said to have been used to check whether the oven was ready for the loaves.
The fried version became widespread in the 20th century and is now the emblem of Lake Balaton beaches, market halls and street stalls. Garlic, sour cream and cheese are the classic trio, though today you'll find it in Hungary with all kinds of toppings.
