The story of this dish
Gulyás means "cattle herdsman" in Hungarian. The dish grew out of the stews that herders on the Great Hungarian Plain cooked in kettles over open fires, and it is said they sometimes pre-cooked and dried the meat and onions to carry on long drives.
Once paprika became part of Hungarian cooking, and especially during the 19th century, this herdsmen's dish moved to town tables and became a symbol of Hungarian identity. Abroad "goulash" usually means a thick stew, but in Hungary gulyás is a soup; the thick stew is called pörkölt.
