The story of this dish
Hungarian paprika dishes fall roughly into two groups: a stew without sour cream is a pörkölt, while one finished with sour cream is a paprikás. Csirkepaprikás is the best known of the family and a Sunday-lunch classic in Hungarian homes.
Paprika is generally thought to have reached Hungary in the 16th-17th centuries, most likely by way of the Ottomans and the Balkans. First a spice of peasant cooking, it spread through all levels of society in the 19th century, and chicken paprikash became one of Hungary's best-known dishes abroad.
