The story of this dish
Quesadilla comes from the Spanish word queso, cheese, and roughly means "little cheesy thing". Corn tortillas were a staple in Mexico long before the Spanish arrived, while cheese entered the cuisine during the colonial period along with European dairy animals.
In Mexico quesadillas are often made with corn tortillas and filled with anything from squash blossoms to mushrooms, and in Mexico City it's a running joke that a quesadilla may come without cheese at all. Large flour-tortilla versions with chicken became popular mainly through northern Mexican and Tex-Mex cooking in the United States.
