The story of this dish
Pico de gallo means "rooster's beak" in Spanish. Nobody is quite sure why: some say it was once eaten by pinching pieces between the fingers like a pecking beak, others point to the shape of the chiles or their sharp, pecking heat.
In Mexico it is also called "salsa mexicana" or "salsa bandera" (flag salsa), because the red tomato, white onion and green chile and cilantro echo the colors of the Mexican flag. Made without any cooking, it is one of the freshest and simplest companions on the Mexican table.
