The story of this dish
Beans, together with corn and squash, have been staple foods in Mesoamerica for thousands of years, grown by Indigenous peoples long before the Spanish arrived. Mashing and frying them, however, became common after the Spanish introduced lard and other animal fats.
"Refritos" is often translated as "fried twice", but that is a misunderstanding. The Spanish prefix "re-" here means "well" or "thoroughly" rather than "again", so frijoles refritos are really "well-fried beans". In northern Mexico they are usually made with pinto beans, while black beans are more typical in the south.
