The story of this dish
The name guacamole comes from the Nahuatl word ahuacamolli, from ahuacatl (avocado) and molli (sauce). Avocados are native to Mexico and Central America and have been eaten there for thousands of years.
The Spanish encountered this mashed avocado sauce when they arrived in Mexico in the 16th century. Ingredients such as tomato, onion and coriander became part of the recipe over time, and it is traditionally mashed in a molcajete, a mortar carved from volcanic stone.
