The story of this dish
Tarhana is a pantry staple made at the end of summer: yogurt, flour, tomatoes, peppers and onions are fermented together, then dried and crumbled to keep through the winter. In Anatolia, neighbors still gather to make and dry it together, and almost every region has its own recipe.
Its exact origin and the source of its name are uncertain; similar dried grain-and-yogurt preparations are known from Iran to the Balkans. A popular Turkish story claims a sultan was served the soup in a poor home, a "dar hane", and that the name came from there, but this is generally regarded as folk etymology.
