The story of this dish
Tabbouleh takes its name from the Arabic tabil, meaning seasoning. Its origins are generally placed in the mountains of Lebanon and Syria, where the abundant herbs that make up most of the salad grow, though this is not documented precisely.
In Lebanon tabbouleh is an essential of the meze table and a point of national pride. It is related to Turkish kısır, but the proportions are reversed: kısır is mostly bulgur, while tabbouleh belongs to the parsley.
