The story of this dish
Fattoush gets its name from the Arabic root fatt, "to crumble", and belongs to the fattat family of dishes built on toasted or stale bread. It is thought to have come from village kitchens as a clever way to use up yesterday's bread.
In Lebanon and Syria fattoush is made with whatever vegetables the season offers, so there is no single fixed recipe. Sumac and crisp bread, however, are the two things that make it fattoush.
