The story of this dish
The "taouk" in shish taouk comes from the Turkish word tavuk, meaning chicken. Grilling meat on skewers spread through the Levant during the Ottoman era, and the chicken version took on a distinctly Lebanese character with its marinade of yogurt, lemon, plenty of garlic and tomato paste.

Hummus
Very soft chickpeas whipped with tahini, lemon and garlic into a silky Levantine dip, finished with olive oil.
