The story of this dish
Kibbeh is the name for a family of dishes made from bulgur and meat across the Levant, especially Lebanon and Syria, and it is often called Lebanon's national dish. The word is thought to come from an Arabic root meaning "ball". There are dozens of versions, from raw kibbeh nayyeh to kibbeh bil-sinieh baked in a tray.
