The story of this dish
The name baba ghanoush is said to combine the Arabic words for "father" and "pampered" or "coquettish", and several folk stories explain it, though none can be confirmed.
Across the Levant the line between baba ghanoush and mutabbal shifts from place to place: in Lebanon the tahini-based charred eggplant dip is often called mutabbal, while baba ghanoush can refer to a salad of eggplant with vegetables and pomegranate molasses. In southern Turkey, babagannuş from Hatay and Gaziantep is a close relative.
