The story of this dish
Onion soup has been a cheap, filling meal for poor households across Europe for centuries, since onions, bread and water were almost always at hand. Legend says King Louis XV invented it one night at a hunting lodge using only onions, butter and champagne, but the story is most likely just that, a legend.
The gratinéed version we know today is closely tied to Paris. The bistros around Les Halles, the city's old central market, served it through the night to market workers and to revelers heading home at dawn. Traditional recipes add white wine or cognac to the stock; this alcohol-free version uses a splash of vinegar for a similar brightness.
