The story of this dish
Ratatouille comes from the peasant cooking of Provence in southern France, and particularly from the area around Nice. Its name is thought to be linked to the French verb "touiller", to stir, and for a long time it was a fairly humble word for a simple vegetable stew.
The version we know today, with aubergine, courgette and tomato, took shape after these vegetables became common around the Mediterranean, probably around the 19th century, although an exact date is hard to pin down. It remains a home recipe that varies from kitchen to kitchen: some cooks fry each vegetable separately, others cook them all together.
