The story of this dish
Quiche Lorraine takes its name from Lorraine in north-eastern France, a region that has long sat between French and German culture. The word "quiche" is widely believed to come from a local form of the German "Kuchen", meaning cake.
The earliest versions were simpler than today's: a bread-dough-like base topped with eggs, cream and smoked pork lardons. Many people in Lorraine still insist that a true quiche Lorraine has no cheese at all; the cheesy version became common later.
French Cuisine
Ratatouille
Provence's sunny vegetable stew, where aubergine, courgette, peppers and tomatoes simmer slowly in olive oil until they melt together.
French Crêpes
Thin, lacy-edged, buttery French crêpes that work just as well with sugar and lemon as with cheese and egg.
