The story of this dish
Crêpes trace their roots to Brittany in north-western France. In this coastal region, where wheat did not grow well, people long ate thin savoury "galettes" made from buckwheat flour; sweet crêpes made with white flour appeared as wheat flour became cheaper and more widely available.
In France, making crêpes on Chandeleur, 2 February, is an old tradition. According to folklore, if you can flip a crêpe in the pan while holding a coin in your other hand, you will enjoy prosperity for the year.
