The story of this dish
The croque monsieur began appearing on the menus of Paris cafés in the early 20th century. Its name combines the verb "croquer", to crunch, with "monsieur", mister; why it is a "mister" has never been clearly explained. The sandwich even gets a mention in Marcel Proust's "In Search of Lost Time".
The classic version uses ham and Gruyère; here smoked turkey takes the place of ham. Its sibling topped with a fried egg is called the Croque Madame, a name said, according to popular lore, to come from the egg's resemblance to a lady's hat.
