The story of this dish
Falafel's origins are debated. The most common view is that it descends from ta'amiya, an Egyptian fritter made with fava beans, and some sources link it to the fasting food of Coptic Christians, though this too is uncertain.
As the dish spread around the Eastern Mediterranean, chickpeas largely replaced fava beans in Lebanon, Syria and Palestine. Today a falafel wrap with tahini sauce is one of the world's best-loved meatless street foods.
