The story of this dish
Sholeh zard means "yellow rice porridge" in Persian. Colored with saffron and perfumed with rosewater, it has long been the centerpiece of celebrations, vows and charitable cooking in Iran. It is cooked in huge pots, especially during Muharram and Ramadan, and handed out to neighbors, the poor and passers-by as part of a tradition called nazri.
It is a close cousin of Turkish zerde, another saffron rice pudding traditionally served at Ottoman weddings. The cinnamon patterns drawn on top, sometimes even names or short prayers, are the most loved part of its presentation.
Persian Cuisine
Chelow with Tahdig
Fluffy, saffron-scented Persian steamed rice with tahdig, the golden, crispy crust from the bottom of the pot that everyone fights over.
Ghormeh Sabzi
Iran's most beloved and fragrant stew, in which slow-fried herbs simmer for hours with lamb, kidney beans and dried limes.
