The story of this dish
Kuku is the Persian name for a thick omelet packed with vegetables or herbs, and kuku sabzi is the best known of them. Its vivid green color symbolizes spring and rebirth, which is why it is a traditional dish for Nowruz, the Persian New Year.
On the Nowruz table it is usually served alongside herbed rice and fish. Because it travels well, it is also a favorite for picnics and journeys, often eaten cold wrapped in flatbread.
Persian Cuisine
Chelow with Tahdig

Ghormeh Sabzi
Iran's most beloved and fragrant stew, in which slow-fried herbs simmer for hours with lamb, kidney beans and dried limes.
