The story of this dish
Khoresh gheymeh is one of the most frequently cooked stews (khoresh) in Iran. Gheymeh here refers to meat cut into small dice rather than ground meat. Yellow split peas, tomato and the sour, slightly smoky aroma of dried lime give the dish its character.
It is the most famous of the votive dishes cooked in huge pots and given away during the month of Muharram, especially on Ashura. Some families top it with fried eggplant instead of potatoes, a version known as gheymeh bademjan.
