The story of this dish
Fesenjan is one of Iran's most festive stews, cooked for weddings, holidays and Yalda, the celebration of the longest night of the year. It is closely associated with Gilan in northern Iran, where walnuts and pomegranates grow in abundance and the dish is traditionally made with duck or wild fowl.
Chicken is the most common choice today, and some regions make versions with meatballs or fish. The balance of sweet and sour varies too: some families like it sweeter, others much tarter.
Persian Cuisine
Chelow with Tahdig
Fluffy, saffron-scented Persian steamed rice with tahdig, the golden, crispy crust from the bottom of the pot that everyone fights over.
Ghormeh Sabzi
Iran's most beloved and fragrant stew, in which slow-fried herbs simmer for hours with lamb, kidney beans and dried limes.
