The story of this dish
Purslane is a succulent green that has been foraged and grown around the Mediterranean and the Middle East for centuries. It is counted among the plants rich in omega-3 fatty acids, and in summer it is one of the most plentiful and inexpensive greens in Turkish markets.
In Turkish cooking purslane is braised in olive oil or cooked with meat, but it is perhaps best loved as a yogurt salad. Similar to cacık, this salad is a cooling partner for grilled meat and rice on hot summer days.
