The story of this dish
Shakshuka belongs to the Maghreb, the region of North Africa that includes Tunisia, Algeria, Libya and Morocco. Its exact origin is uncertain, though many sources point to Tunisia, and the name is said to come from a local word meaning a mixture. It is a popular breakfast and supper in Morocco too, often spiced with cumin and harissa.
North African Jewish immigrants made it hugely popular in Israel, and from there it spread around the world. Turkish readers may recognize it as a spicy cousin of menemen, the difference being that the eggs cook whole in the sauce rather than being stirred in.
Moroccan Cuisine
Chicken Tagine with Preserved Lemon and Olives
A classic Moroccan dish of chicken braised in a fragrant saffron and spice sauce with preserved lemon and green olives, made without a tagine pot.
Moroccan Vegetable Couscous
Fluffy couscous topped with vegetables and chickpeas simmered in a spiced broth, Morocco's generous Friday family meal.
