The story of this dish
Tagine (tajine) is the name of both this dish and the cone-lidded clay pot it is traditionally cooked in. It is generally traced to the Amazigh (Berber) peoples of North Africa; the conical lid condenses steam and drips it back onto the food, allowing slow cooking with very little water.
