The story of this dish
Couscous has been made for centuries by the Amazigh (Berber) peoples of North Africa from semolina rolled by hand into tiny grains. Traditionally it is steamed in a two-tiered pot, the couscoussier, above a simmering stew that perfumes it.
In Morocco couscous is above all a Friday dish, shared by large families after the midday prayer, and seven-vegetable couscous is one of the classic versions. In 2020 the knowledge, know-how and practices around couscous were added to UNESCO's Intangible Cultural Heritage list following a joint nomination by Algeria, Mauritania, Morocco and Tunisia.
