The story of this dish
Harira is Morocco's best-known soup and is closely tied to Ramadan, when it is served at sunset to break the fast alongside dates, hard-boiled eggs and chebakia, sesame-and-honey pastries. It is also made all year round at home and at street stalls.
Its name is often linked to the Arabic word for silk, a nod to its smooth texture. Its exact origins are uncertain, and some sources point to Andalusian influence. Every family has its own version, with lamb, beef or chicken, or no meat at all.
