The story of this dish
Zaalouk is one of the most popular of Morocco's cooked salads, small dishes served with bread at the start of a meal. Eggplant, tomato and garlic are cooked slowly with cumin and paprika, and the result can be eaten hot, warm or cold.
Unlike many smoky eggplant dips of the eastern Mediterranean, zaalouk is mashed and then cooked again in the pan, which gives it a deeper, more concentrated, spiced flavor. In Morocco it is typically scooped up with bread alongside tagines and grilled meats.
