The story of this dish
Pkhali (also called mkhali in some regions) is the name of a family of Georgian appetizers in which cooked vegetables are mixed with walnut paste. Spinach, beets, chard, cabbage and green beans are the most common, each adding its own color to the table.
The combination of walnuts, garlic, cilantro and fenugreek is one of the signature flavors of Georgian cooking. Being meat-free, pkhali, like lobio, is a staple during fasting periods and regularly appears among the opening dishes of a Georgian feast, the supra.
