The story of this dish
The name comes from khokhobi, the Georgian word for pheasant, so this began as a game dish. Over time chicken, easier to find at home, took the pheasant's place, but the name stayed.
Today chakhokhbili is one of Georgia's favorite home-cooked dishes. Some recipes add a splash of wine to the sauce; this home version is alcohol-free and gets all its flavor from tomatoes, onions and a generous amount of fresh herbs.
