The story of this dish
Khachapuri is a symbol of Georgian cooking, its name built from Georgian words for curd cheese and bread. Every region has its own style, but the version from Adjara, around the Black Sea city of Batumi, is the most recognizable thanks to its boat shape and egg on top.
According to popular legend, the boat reflects the region's bond with the sea and the yolk represents the sun. Its resemblance to the egg-topped cheese pides of Turkey's Black Sea coast is striking too; the two cuisines have been neighbors along that shore for centuries.
