The story of this dish
Lobio simply means "beans" in Georgian, and the word covers a whole family of bean dishes. Beans came originally from the Americas, but Georgians quickly embraced them and paired them with the cornerstones of their cuisine: walnuts, garlic and cilantro.
In the western region of Imereti especially, lobio is traditionally cooked and served in clay pots, alongside mchadi cornbread and pickles. Because it contains no meat, it is also a staple during the fasting periods of the Georgian Orthodox Church.
