The story of this dish
Khinkali is associated with the mountain regions of north-eastern Georgia such as Pshavi, Mtiuleti and Khevsureti, and spread from there across the country. The highland Mtiuluri style uses only meat, onion, salt and pepper, while the city-style Kalakuri version adds fresh herbs such as cilantro.
Some suggest that meat-filled dumplings reached the Caucasus from Central Asia during the Mongol period, though this is not certain. Today khinkali is a must at Georgian gatherings, and the number of pleats is seen as a mark of skill. The original usually mixes pork and beef; this recipe uses beef and lamb.
