The story of this dish
"Soufflé" means "blown" or "puffed up" in French, which describes exactly how this dish rises with air in the oven. The first soufflé recipes appear in French cookbooks of the early 18th century, but it was the celebrated chef Antoine Carême who, in the early 19th century, turned it into a showpiece of French haute cuisine.
There are many joking warnings that a soufflé will collapse if you open the oven or speak loudly near it. In reality it follows a few simple rules and is perfectly manageable at home if you work calmly. In France, cheese soufflé is enjoyed as a light lunch or as a starter before dinner.
