The story of this dish
The name means "Huancayo-style potatoes", after a city in Peru's central Andes. Legend has it that a woman from Huancayo sold these potatoes to workers building the railway between Lima and the highlands, and the dish took the name of her hometown, though the story cannot be confirmed.
Potatoes, ají amarillo and fresh cheese are pillars of Peruvian cooking, and this dish brings all three together simply. Today it is a much-loved starter at home and in restaurants, and its sauce turns up alongside many other dishes.
